Though it’s not confirmed, most credit Dom Pérignon with discovering champagne. The Benedictine monk, tasked with handling wine production, was supposed to remove the bubbles from fermenting wine. When he couldn’t, he tasted it instead and allegedly declared, "Come quickly, I am drinking the stars!"
